Potato protein is derived from de-starched potato juice from which the proteinaceous fraction has been precipitated by thermal coagulation followed by dehydration. (AAFCO, 2003) Potato protein has been removed from the potato itself and is no longer considered a whole. Additionally, protein from meat sources is more bioavailable protein for pets.
