LECITHIN

Lecithin is a specific phospholipid and the principal constituent of crude phosphatides derived from oil-bearing seeds, usually soy. (AAFCO, 2003) Lecithin is often added into food as a stabilizer, but has some health benefits including cholesterol control and is an integral part of cell membranes.
